Got Halibut? Then Butter Poach It.
Until I moved to the Pacific Northwest, halibut was not much of a fresh seafood option for me.
These days I'm surrounded by fishing buddies with freezers full of flash frozen and vacuum sealed halibut caught on Alaskan fishing trips.
So, I was thrilled to get ahold of some big chunks of white fish flesh ... until I actually cooked it.
I constantly managed to turn this delectable seafood into dry, overcooked blocks of something closely resembling styrofoam.
Then someone told me I should try poaching it in butter.
